Stuffed Banana French Toast w/Pineapple or Peanut Butter Syryp

Here's one of my many inventions!

Mash a very ripe banana. Optional: sprinkle with cinnamon and, or add sesame seeds. Using a really nice grainy GF bread, such as Flax by Glutino, make a sandwich with the banana spread. Beat a couple egg yolks, with electric beater beat the egg whites till little fluffy, fold into yolks. Dip sandwich into eggs. In a hot buttered skillet, place sandwich. Cook till golden on each side. (If you have a cholesterol issue, may omit yolks altogether).

Pineapple Syrup: place a 15oz can of crushed pineapple, in natural juice, juice and all, into blender. Puree until smooth.  In saucepan, heat about 1/4 Cup of butter, add puree. Heat and pour over french toast.

Peanut Butter Syrup: Heat a nice natural smooth peanut butter in saucepan. Stir while heating.  When warmed, pour over french toast. Enjoy; yummy!
